Bacon Cheeseburger Casserole

A fun recipe that is easy on Mom, especially, after chasing down Easter eggs and children all last weekend. A few minutes at the stove and it is in the oven – all in one dish. Serve with a big salad or lots of carrot and celery sticks.

BACON CHEESEBURGER CASSEROLE

Ingredients:
1-2 pounds ground beef
6 strips of bacon, crisply fried anad drained
1/4 cup onion, chopped
5 garlic cloves, peeled, smashed and chopped
8 ounce can of tomato suace
1/4 cup catsup
1/4 cup favorite barbecue sauce
1 teaspoon salt, optional
1/4 teaspoon freshly ground black pepper
16 ounce can refrigerated biscuits*
1 cup sharp cheddar cheese, shredded

Directions:
Combine ground beef and flour in skillet. Add onions, garlic, and brown. Pour out most of the drippings. Add tomato sauce, catsup, barbecue sauce, salt and pepper. Mix until heated through. Spread into a large casserole dish. Crumble and top with the prepared slices of bacon. Bake for 10 minutes at 425 degrees. Top with cheese and biscuits and bake for 10-15 minutes longer or, until the biscuits are golden.

*Substitute your own gluten-free biscuit recipe for equally good results.

Italian Casserole Dish

This is a relatively quick meal to get into the oven. You can add some crusty, warmed bread, and a crisp salad to make it a feast and impress your family with your culinary abilities!

Italian Casserole Dish
8-10 ounces uncooked pasta shape of choice (not spaghetti, however)
2 eggs
2 cups cottage cheese
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup (4 ounces) shredded mozzarella cheese, divided
1 cup shredded Parmesan or Romano cheese, divided
1/4 cup crumbled Feta cheese
1/3 cup minced fresh parsley
1 teaspoon salt
pepper to taste
Pinch of chili flakes to taste
2-1/2 cups spaghetti sauce, divided

Cook pasta according to package directions. Drain and reserve.

In a large bowl, combine the eggs, cottage cheese, spinach, ½ cup mozzarella cheese, ½ cup Parmesan cheese, Feta cheese, parsley, salt, pepper, and chili flakes; set aside. Stir in 2 cups of spaghetti sauce into the pasta. Layer half of the pasta mixture in a greased 11-in. x 7-in. baking dish coated with vegetable oil spray. Layer with spinach mixture, remaining pasta mixture and remaining spaghetti sauce. Top with remaining mozzarella and Parmesan or Romano cheese.

Cover and bake at 350° for approximately 45 minutes or until bubbly. Uncover and continue baking for another 10 minutes to brown the top a bit.

Saturday Night Special – Bacon Cheeseburger Casserole

After a week of errands, taking children to school, etc., you would think Saturday would be an easy day. I seem to, however, constantly come up onto the dinner hour without a single thought in my head as to what to cook. This recipe can be a lifesaver and I doubt if you would find too many people who wouldn’t be happy to see this meal on the dinner table.
